Method
Beat the soft butter (125 g½ cup + 1 tbsp) and granulated sugar (150 g¾ cup) until creamy. Beat in the eggs (2), vanilla (1 tsp) and zest.
Dissolve the baker's ammonia (1½ tsp) in the milk (125 ml½ cup) and add it, then the all-purpose flour (500 g4¼ cups) and salt. Knead to a smooth dough and rest 30 minutes.
Heat the oven to 350°F (180°C) and line baking sheets.
Roll the dough 4 mm (⅛ inch) thick, cut shapes and prick them with a fork.
Bake 12 to 15 minutes, until pale gold. Open a window; the ammonia smell clears as they bake.
Cool completely and store airtight.
Notes
- Keep them thin. Thicker biscuits can hold on to an ammonia taste.
